Hi folks!
Usually we would prepare fried rice when we have leftover rice. As I don't have time to stand over the stove to fried the rice and weather is kinda hot, I make congee/porridge instead.
I simply add whatever ingredients i wanted into the rice, add water, seasalt & seasoning; leave it to cook for 5-10mins.
Here I have leftover multi-grain rice from yesterday(which I kept in fridge promptly after it gets cold). I added mushroom, ginger slices, tomatoes, kelps, French beans, Siew pak choy(all these pre-cut and nicely-packed in Tupperware earlier). Voila...my brunch is ready while I hang my laundry. Awesome, warm and yummy comfort food for busy mom ;)
